Do you want to have your rice and not add any carbs to your body? There is a vegetable sitting comfortably in your kitchens or refrigerators at the moment that can solve this problem. It is the good old cauliflower. It is a versatile vegetable that should be used more often than it gets used.
A cauliflower is a cruciferous vegetable and cruciferous vegetables are extremely low in calorie and rich in folate, vitamins C, E, and K, and fiber. They are a great source of phytonutrients which may help lower inflammation and reduce the risk of developing cancer.
You can use cauliflower in place of your traditional rice and eat away without any guilt.
How to cook?
Cauliflower, olive oil and cumin seeds (as per taste)
- Cut the cauliflower into small florets and remove the leaves.
- Whirl the florets in a food processor till they are finely chopped. Be careful to not turn them into mulch.
- Cook them as you normally cook rice but without adding water as the chopped florets already contain enough water. Just sauté them in oil and add a few cumin seeds if you want.
Cauliflower rice is good to eat!
It is fluffy and grainy. And it tastes better than you think. Pair it with your favourite curry or add sauces to toss up some fried rice. You will never know the difference. You can also store the chopped cauliflower in zip lock packets and use them as and when you need them just like you store and use the rice grains. The riced cauliflower is also used in some other healthy no-carbs and gluten free foods like the cauliflower bread sticks, pizza crust and fritters.
Now, take out the cauliflowers from your refrigerators and put them to some healthy use!
